giving the perfect excuse to make some yummy pancakes. Once more, this
age-old tradition reminds us of just how delicious and versatile pancakes can
be.

of a Tiramisu Pancake Recipe.

                       Tiramisu Pancake Recipe (serves 4)

    Ingredients
    1 packet frozen pancakes
    4oz cream cheese
    4oz Mascarpone cheese
    1/3 cup of sugar
    1 teaspoon of your chosen flavour of Rogers Estate Coffees ground coffee
    1 tablespoon water

1. Warm the pancakes according to the directions on the package

2. Beat the cream cheese, mascarpone cheese and sugar in a large bowl
until combined. Dissolve the coffee in small amount of warm water and add to
the cheese mixture and mix well.

3. Place a pancake onto a plate and dollop with the cheese mixture;
repeat the layers two more times, ending with a dollop of cheese mixture
topping each stack. Sprinkle with cocoa if desired and serve immediately.
